Hi all! So I bought a used 2003 749s with Ohlins rear shock and am struggling with a good setup. I don't ride aggressive and weigh about 250. I will be doing a track day soon I hope but I am just looking for a good starting point for the street. Any info would help.

Try this for a start point:
Front: spring preload- maximum; rebound damping- 6 clicks out; compression damping- 4 clicks out (or 1/2 turn, can't remember if it's stepped or not) Rear: spring preload- 40mm of thread showing; rebound damping- 12 clicks out; compression damping- 6 clicks out Rear ride height adjuster: 4mm thread showing
Your weight is above the range of the stock springs, so you'll be compromising a bit on settings until you get springs appropriate to get you the correct static sag. Simply cranking up the rear spring preload to absolute max will cause the shock to "top out" over bumps, causing handling issues, so try 40mm of thread showing above the spring locknut to start.
