Conflicting advice from everyone. purchasing first serious bike.

Well I have been researching bikes for the past few years I have always loves sports bikes and have just recently gotten to a point in life where I can justify making the purchase.
My step-dad whom is deep into the sports-bike world and has went from the 600cc world all the way to track racing a 'busa, and has quite a few years of experience recommended an sv650. (he does not live around me so its not like I could have one of his old bikes.) upon going to the local shop "haulin tail" the salesman pointed me towards the hyosung/um V2S-650r saying it was near identical to the sv650 and in someways better some ways inferior. looking around seeing a mass of gixxers and benellis I concluded he knew his stuff, he then pointed me towards the 20 bike saying its great for an entry level bike, thats comes to my question.
I have ridden both a 75cc dirt bike and more often a 125cc harley look-alike and can handle both of them well though neither of them are anything like a sports bike. I get the feeling the 250 is "too little bike for the long run" but upon reading the sticky post at the beginning of this forum I see theres not really too little bike if its streetable.
Ill be riding mainly in a college town (statesborro)with mostly straight roads (main highway at least) and quite a few starts and stops, but I also have a home (not my apartment) further out that is outside of city limits a good hour from the college that is surrounded by long curvy banked turns. i also plan to possibly track the bike at times.
to my question. as a starter bike and in the long run which of these two is the better bike? with the price difference between the two the cost isn't really restrictive I just want to start my cycling passion on the correct foot and insure a good base to build my skill on (a necessity I learned from horse riding).
any and all comments, input and critique is appreciated.
Edit: also wanted to add my frame im 6'0 and am on the soccer playerish side in terms of build, i have been told that me being tall and lanky I would have issues with smaller bikes but both bikes felt comfortable standing up on the show-floor but we know that, that does not add up to riding comfort.

since i have a lack of experience can't give much advice, but i will say read some reviews on bikes before buying. i keep hearing nothing but good things about honda CBR600, altho i test road a 02 model and found that it was'nt comfortable as a '02 R6 my buddy has. i found the CBR foot pegs wer'nt to my likeing. the shift lever was so small i had a hard time shifting (altho i just got off work and was wearing steel toe work boots.)try sitting on a few and see what you like. found this review from google.

after reading that review, i'd go with the sv650. may cost a bit more, but it seams worth it.
experience streetbike riders i know and work with tell me crusing around a sportbike is fine. heading to the neibooring town (70miles away) is about the max as it does get uncomfortable. (Not speaking from experience, just what i was told.) but then again, you don't buy a sport bike for compfort. btw. i'm 6'0" as well, but with a "contrustion worker" build.

try going to your local motorcycle dealer and seat and feel all the bikes they have.suspension wise they can always adjust it according to your type of riding,height,weight etc..pick the one that your comfortable with and dont worry about how good bikes are these days they all good doesnt matter what brand you get.i love the look of the r6 but it wasnt comfortable for me.so i chose the gsxrk7.been riding it for six months now and its just keep getting better and better.so in my opinion chose wisely.doent matter what people say about how comfy there bikes are..remember??..ull be the one riding it.good luck.
