I've just completed my MSF course and I've done a ton of research on bikes best for beginners and the type of riding I will predominantly be doing (small city). I have narrowed it down to these two. I, like most newbies, first started looking at the 600cc sport bikes but was actually talked out of it by 2 salesman at 2 different dealerships. I wanted a Gixxer, but am glad I'm not getting one now after everything I've read. No way I'm ready for one of those.
So anyways, thoughts/opinions on the Suzuki or Buell?

First of all I'm *shocked* you had 2 salesman talk you out of a 600cc SS but I'm glad you listened. The SV650 is a decent choice for a first bike; maybe a little in the gray area. I'd highly recommend it (the naked version) over the Buell due to cost, ease of purchase/sale, community support, reliability, lighter weight and mellower power output (better for a new rider). It was my first bike and I've since moved onto an R6.
Don't get me wrong about the power though; it's a club racing phenomenon because it's so able and needs just a few mods to transform it into a track bike.
Here's a couple of resource sites for you so you can get some more info:

Good luck!

I also am looking at what bike would be best to start on. I've come to the conclusion of the SV650.
I was curious, though. How difficult is it to learn on this bike? Everyone says it's a handfull, but what really makes the difference between too much or just right? If it's just dedication, I think I'll do just fine.
Is there something in particular, though, that I should be concerned about? And would a used 06 be better than an 08?
Any help is great!

The sv650 is a good starter bike and is fun to take to the canyons. The only thing I would be worried about is the torque because it is a v-twin engine.
