In a relatively tight corner? If my entrance speed is 65mph or greater, I'm usually in second gear, but the throttle is obviously really twitchy. I'd like to think I'm taking them fairly aggressive, but I don't ride with too many 'good twisty' riders for reference. For anyone in SoCal, I'm referring to the corners at Ortega HWY 74. Thnx. Recent Motorcyclist magazine article (Boehm at Kevin Schwantz Suzuki School) recommends 60 - 80% of redline as a rule of thumb for engine rpm at corner exit. Reg Pridmore at CLASS also recommends keeping the engine spinning.
This is made a bit more complicated as numerous bikes seem to have abrupt on/off throttle transitions because of fueling or excessive driveline lash and the effect is worse in 1st gear. Can try to tune/tweak the motorcycle to smooth this out and the rider needs to try to be as smooth and precise as possible on the throttle, especially with higher powered bikes.
If the bike is lugging when you pick the throttle up, then you are most likely in too high a gear. Otherwise, corners, bikes and riders vary so unless you are riding really aggressive, imho, does it really matter as long as you are able to maintain or gradually and smoothly roll on through the corner to conserve traction and stabilize the motorcycle on its suspension? After all, there are no trophies or purse money on street rides anyway.
